Chili Elizabeth Taylor Recipe
Ingredients:
1&1/2 Tbsps of vinegar (red wine)
1&1/2 Tbsps of Worcestershire sauce
2 Tbsps of chili (powder form)
Red pepper flakes
4 Tbsps of tomato puree
Salt
Pepper
1/4 tsp of Laurel leaves; ground
1 c of tomatoes in can; drained & seeded
1/4 tsp of hot sauce
1 lb of grounded beef
1/2 tsp of basil; dried
2 Tbsps of vegetable oil
1/2 tsp of thyme; dried
5 cloves of garlic; minced
1 1/2 Tbsps of sugar
1 pc of onion (large); minced
Instructions:
Saute garlic and onion until onions are clear but garlic is not charred. Mix in beef then cook ’till beef is nicely dark in color. Add the chili,(tomato) puree, Worcestershire sauce, vinegar, chili sauce, Laurel leaves, flaked pepper and salt.
Bring to boil and simmer for one hour then season according to one’s. Let it cool and place in the fridge until ready for use.
Just before cooking this dish, preset oven, 375 deg Fahrenheit. Place chili inside a baking dish. Decant corn-bread batter on atop chili.
Pop in the oven for thirty minutes ’till cornbread has been set. Serve alongside black beans. Good for four people.

Marianne’s Chili Recipe
Ingredients:
1 pound of cooked hamburger; drained & chopped
16 ozs of tomato sauce
1 pound of cooked linguica; sliced thinly
1 pc of chopped onion
1 pc of chopped green bell pepper
1 c of raw carrot; sliced
2 c of raw potatoes; sliced
A can of kidney beans (dark)
Instructions:
Combine hamburger, linguica, onion, bell pepper, carrots, potatoes, beans and tomato sauce. Let it cook in pot for 3 to 5 hours over low-heat.

Chili Dog Rolls Recipe
Ingredients:
8 ozs of tomato sauce OR 1 pc of tomato (large); diced
1/2 tsp of salt
1 tsp of oregano
2 tsps of chili (powder form)
1 tsp of cumin
1 Tbsp of olive oil
2 Tbsps of olive oil
1 c of mushrooms (large); chopped
1 clove of garlic; diced
1/2 pepper (green); minced
1 pc of onion (medium); minced
1 c of TVP flakes or granules
7/8 c of boiling water
4 c of flour (unbleached or whole wheat)
1 Tbsp of olive oil
1 c of water (warm)
1/2 tsp of honey or sugar
1/4 c of water (warm)
1 Tbsp of yeast (active, dry)
Instructions:
Mix together yeast with honey with one fourth cup water (warm) until it dissolves completely. Set it aside. Add one cup of water (warm) and one tablespoon of oil. Mix in your flour.
Knead gently for five minutes. Transfer to another bowl and cover with dish cloth. Leave it to rise, about one hour.
Mix together the TVP in hot water. Leave it to steep as you ready your vegetable filling.
Saute onions, garlic and pepper until onions are clear. Transfer onion mixture onto a bowl. Using the same pan saute soaked TVP for two minutes then add oregano and cumin.
Cook gently for a couple of minutes then add your sauce or tomatoes. Meanwhile, halve your dough. Make sure that you have punched down on it.
Roll half of your dough to about five inches in width. Flatten and fill in with vegetable filling. Seal all edges. Repeat process to the other half.
Roll and seal edges then cut into ten small pieces. Place on greased baking tray, making sure that the seam-side faces down. Leave it to rise about twenty more minutes. Pop inside the oven for twenty five minutes, 375 degrees F ’till nicely browned.
Makes twenty chili rolls.

Black Chili Paste – Nam Prik Pow Recipe
Ingredients:
1 c of oil
4 ozs of jalapeno (dried)
1 c of shallots; chopped
1 c of garlic; chopped
8 ozs of shrimp (dried)
2 Tbsps of shrimp paste
1/4 c of sugar
1/3 c of fish sauce (Nam pla)
Instructions:
Combine all ingredients together. Good for 1 helping.

Ingredients:
1/3 c of water (at room temperature)
1/3 c of vinegar (white)
1/3 c of sugar (granulated)
1/2 tsp of chili paste (with garlic)

1/2 tsp of garlic; chopped finely
Instructions:
Place water on a saucepan; let it boil. Once boiling, add vinegar, sugar, chili paste, salt, and garlic. Cook 2-3 mins or till sugar has dissolved completely. Serve it hot.

Mexican Chili Mole Recipe
Ingredients:
1 Tbsp of olive oil
2 Tbsps of olive oil
3 pcs of onions (large); chopped
2 pcs of celery stalks with leaves; diced
3 cl of minced garlic (large)
16 ozs of tomato sauce
1/4 c of cocoa (unsweetened)
2 Tbsps of chili powder
16 ozs of kidney beans (white); rinsed & drained
3 c of shredded cheese (Jarlsberg)
16 ozs of kidney beans (red); rinsed & drained
1/4 c of vinegar
10 ozs of canned corn (whole kernel)
Instructions:
Saute garlic, celery and onion ’til translucent into a large-sized saucepan. Add in the tomato sauce, basil, chili, cocoa, vinegar and tomato sauce.
Allow to simmer for 15-20 minutes, occasionally stir. Add in corn and beans then allow to simmer for another 15-20 minutes.
Mix in half of cheese and sprinkle the other half of cheese over chili. Good for 6 persons.

Beef Chili Recipe
Ingredients:
2 c of round beef (ground)
1 c of bell pepper (green); cubed
1/2 c of celery; cubed
1 pc of onion (medium); chopped
1 pc of garlic clove (large); chopped finely
1/2 c of olives (black, extra large); chopped
15 oz of beans (kidney, canned)
11 oz of stewed tomatoes (canned)
2 Tbsps of sugar (brown)
1 Tbsp of chili powder
1 Tbsp of cumin (ground)
1 pc of chili pepper; chopped finely
2 Tbsps of vinegar (oregano)
1 c of water
Instructions:
Heat oil on a saucepan; add ground beef and cook till browned, drain then set on the side. Saute garlic, onion, celery, and green pepper till softened. Add olives, kidney beans, stewed tomatoes, brown sugar, chili powder, cumin, chili powder, and oregano vinegar.
Let it simmer at about fifteen mins. Add the water; continue simmering for another fifteen mins. (Adjust water according to preferred consistency).

All-American Chili Dog Recipe
Ingredients:
1 small pepper (green); chopped
1/8 tsp of redpepper (ground)
8 pcs Frankfurter roll
1 shredded cheese
1/2 pound of beef (ground)
1 onion (small); chopped
1 garlic clove (medium); chopped
A can of tomatoes (16 ounces); crushed
A pack of Frankfurters (16 ounces)
1 Tbsp of chili powder
1 Tbsp of tomato paste
1/2 c of extra-sharp cheddar cheese
1 pc wilson
Instructions:
Place skillet over mid-heat and saute the beef for three minutes ’til browned. You add green-pepper, onion, chili powder and garlic. Cook for three more minute, stirring well.
Add tomatoes w/ the juice, paste, redpepper and a teaspoon of salt, boil. Reduce fire onto low-heat then simmer without cover for ten minutes.
Have the grill prepared. Create crosswise slices on Frankfurters, 1/3 through. Have them grilled at least six inches away the heat, turning them occasionally every five minutes.
Toast your rolls lightly. You place your grilled Frankfurters into rolls. Spread chili-paste on top of every Frankfurter then top w/ cheese.

Ingredients:
1 can of chilis (green, chopped, 4 ozs)
1/4 c of cilantro (fresh); chopped
2 tsps of honey
1/4 c of water
2 pcs of garlic cloves

Pepper (to taste, freshly ground)
Instructions:
Put the chilis, cilantro, water, lime juice, garlic, honey and pepper in blender or food processing machine. Process until mixture becomes smooth. Makes 1 serving.

Ingredients:
4 pcs of fresh sliced bread
1 tsp of salt
2 lbs of ground deer or elk
1 pc of onion (medium)
2 pcs of eggs

Instructions:
Soak bread into the water to soften. Add in salt, meat, onion, eggs, pepper and chili. Mix the ingredients thoroughly.

Ingredients:
1-1/2 Tbsps of peanut oil
1/2 Tbsp of chilies; crushed
1 Tbsp of cumin (ground)

Instructions:
Preheat the oven at 325 degrees F. Combine oil, chilies, cumin, sugar, and turmeric inside a (baking) pan; mix thoroughly. Add the peanuts and toss. Spread onto the pan (single layer).

Ingredients:
1 pack of chili mixture
Pepper (green and red); chopped
2 lbs of beef; ground

Instructions:

1/2 c of chili peppers (green)
2 oz of shredded cheese (Cheddar)

Instructions:

Ingredients:
4 Tbsps of oil

3 Tbsps of garlic; chopped finely

3 pcs of chilis (red, dry); deseeded & coarsely chopped
Instructions:
Heat oil and saute garlic ’til it turns gold-brown in color, then remove garlic then set it aside. Saute shallots to the used oil ’til it becomes crispy, take it off from oil and leave it aside. Now, saute chilis ’til its color darken, take it off from oil and lay it on mortar along with garlic and shallot.
Pound it all together. Afterward, reheat oil, then add paste. Sprinkle salt as well as sugar, mixing well ’til its sauce turns thick red/black in color.

Scoop chili on atop frankfurters and return to the microwave and heat again ’till chili gets heated through.
As a variation for Coney Dogs, you can top frankfurters with freshly chopped onions.

Instructions:
Sear burgers. Add the garlic and onions. Cook until onions are tender.
Mix in the beans, tomato sauce and chili powder. Simmer for fifteen minutes. Heat up the hotdogs and the buns. Sandwich hotdogs inside buns and garnish with the onion mixture.
Garnish with more diced onions and cheese if needed. Good for six persons.

Bexar Chili Recipe
Ingredients:
2 lbs of meat; ground
3 Tbsps of chili (powder)
1 Tbsp of oil
15 ozs of canned tomato sauce
1/4 tsp of salt
1 qt of water
Instructions:
Saute slowly meat in oil ’til browned evenly. Add in water plus sauce. Allow to simmer in an hour’s time.
Mix in chili with salt then allow to simmer in pan for another 30 minutes. Pour into serving bowl. Good for 1 helping.

Ingredients:
1 can of chilis (chopped green, 4 ozs)
1/4 c of cilantro (fresh); chopped

Pepper (freshly ground, to taste)
Instructions:
In blender or food processing-machine, put the chilis, cilantro, water, lime juice, garlic, honey as well as freshly ground pepper then process ’til mixture becomes smooth.
As an alternative, try using chilies, which are fresh as well as green, and at most 1/4 c of cilantro (dry). You can also use lemon (juice) in exchange for lime. You may omit the pepper.

2 tsps of powdered chili
1 tsp of cumin (ground)
3 pcs of dried hot chiles (red, small)

Instructions:
Place nuts on a baking dish. Bake at 350 degrees F for 15 mins, while stirring frequently, till slightly golden. Take out from oven then add powdered chili, chiles, oil, and cumin; blend thoroughly.
Bake again for 8-10 mins or till slightly brown, stir once. Season salt.

Ingredients:
2 c of vinegar (cider)
1 Tbsp of hot sauce (Tabasco)
3 Tbsps of salt
2 Tbsps of paprika

3 Tbsps of pepper (black)
1 c of water
Instructions:
Combine vinegar, hot sauce, paprika, salt, Worcestershire, chili powder, black pepper, and water; mix them thoroughly. Let the flavors blend well.

Chili-&-Tomato Dip (Nam Prik Num) Recipe
Ingredients:
2 Mexican chilies
5 garlic cloves; peeled
1 Tbsp of cilantro (fresh); chopped
1 Tbsp of freshly-squeezed juice of lime
3 peeled shallots (large); halved
2 medium tomatoes (ripe, 1/2 pound)
2 Tbsp of sauce
Instructions:
Have a large skillet placed over high-heat then add chilies. Dry-fry them for 4 mins.
Press down w/ wooden-spoon then occasionally turn. Add in garlic and shallots then continue dry-frying for 5 mins ’til skins of chili turn black.
Transfer into bowl at once then completely cool. Then add your tomatoes into skillet then have them dry-fried for, occasionally turn, for 5 mins ’til skins turn black. Allow to cool.
You remove chili stems then slice into two lengthwise. Core tomatoes then slice into four. Place shallot, chilies & tomatoes in processor then pulse ’til mixture achieves salsa-like consistency.
Transfer into bowl then add cilantro, juice and sauce.

Ingredients:
1/2 tsp of garlic; minced
2 tsps of chili paste; roasted
1 1/2 tsp of chilies (serrano); diced

5 Tbsps of scallions; sliced thinly
6 Tbsps of sauce (Thai)
Instructions:
Mix together, scallions, garlic, chili paste, serrano chilies and lemon juice. Add the cilantro and Thai sauce. Mix thoroughly.

Chilie Tomato Salad Recipe
Ingredients:
1.5 tsp of oil (olive)
6 pcs of tomatoes (small); quartered
1/2 bunch of parsley; coarsely chopped
2 Tbsp of lemon juice
1/2 pc of chili (hot green); coarsely chopped
Pinch of salt, cayenne and pepper
Instructions:
Mix tomatoes, chili and parsley then chill. Mix all other ingredients then set them aside. Let them stand. Mix all mixtures together prior to serving.
