New Mexican Chili Pork Recipe


New Mexican Chili Pork Recipe

Ingredients:

3 lbs of pork shoulder; cubed to 1/2 inch
2 pcs of garlic cloves
1 tsp of salt
8 Tbsps of mild chile (red, ground)
1/2 tsp of oregano (dried, Mexican)
3 c of broth (chicken)
4 c of beans (pinto)

Instructions:

Melt (pork) fat on a skillet above moderately high heat. Gradually add cubed porks, stirring constantly to even out the browning. Add garlic and salt; stir thoroughly and take out from heat. Add oregano and chile; stir to coat the porks evenly and add chicken broth, just enough amount, stir thoroughly.

Heat again and add chicken broth; stir thoroughly and continue adding broth gradually, while stirring continuously till chili has smoothened. Reduce heat then let it simmer for an hour, uncovered.

Taste to adjust the seasonings. Serve with freshly (stewed) beans.

Chili Verde Recipe


Chili Verde Recipe

Ingredients:

4 pork-steak slices
5 Tbsps of flour
1/4 tsp of garlic
1/2 tsp of oregano
2 cans of whole green-chilies (7 ounces each); chopped
1 onion; chopped
4 c of water
1/2 tsp of pepper (red)
2/3 tsps of cumin (ground)

Instructions:

Remove steak fats. Slice steak evenly into bite-size cuts; fry ’til well-done.

Remove the meat then cook onions ’til tender. Have the onions removed from pan.

Combine steak drippings, water & flour to create a gravy. Put meat back into pan together w/ the onions & gravy. Blend in rest of ingredients then allow to simmer. Add 2 to 3 hot chilies (Fresno) as you please.

Spit Roasted Chili Barbequed Ribs Recipe


Spit Roasted Chili Barbequed Ribs Recipe

Ingredients:

4 Tbsps of butter
1 pc of onion; chopped finely
2 pcs of garlic cloves; chopped finely
4 c of plum tomatoes (canned); pureed
2 tsps of chili powder
1 c of dry wine (red)
2 Tbsps of cornstarch
1/2 c of soy sauce
1 Tbsp of sugar (granulated)
Salt
1/2 c of stock (chicken)
5 lbs of spareribs (trimmed)

Instructions:

Melt the butter on a saucepan above moderate heat; cook the onion till softened. Add the garlic; cook for one min. Add tomatoes, chili powder, wine, cornstarch, soy sauce, sugar, salt, and stock; let it boil.

Once boiling, let it simmer. Take out from the heat; set on the side.Thread the ribs then secure using the prongs; Cover 2/3 of the way. Roast it for half an hour; basting every 10 mins till juices are clear.

To plate, place the ribs onto a platter and spoon sauce around the meat.

Chili Primero Recipe


Chili Primero Recipe

Ingredients:

1 lb of bacon (smoked); cut to 3/8-inch pieces
4 lbs of steak (round); cut to 1/4-inch cubes
56 oz tomatoes (canned)
15 oz of tomato sauce (canned)
6 oz of tomato paste (canned)
7 oz of chilies (green, canned); diced
2 Tbsps of peppers (jalapenos); diced
4 oz of pickled cactus (canned); drained, diced
2 c of onions; chopped
2 c of bell pepper (green); chopped
1 c of parsley (fresh); minced
2 tsps of coriander (ground)
3 pcs of garlic cloves; minced
1 tsp of pepper (cayenne)
8 tsps of cumin (ground)
1/4 tsp of oregano (dried)
2 tsps of salt
1/4 tsp of paprika
1 tsp of black pepper (freshly ground)
1 Tbsp of juice (freshly squeezed lemon)
2 Tbsps of chili powder (mild)
1/2 tsp of chili powder (medium-hot)
1/2 c of flour (Masa Harina, corn)

For the Garnish:
Sour cream
Cheese (Cheddar); shredded
Cheese (Monterey Jack); shredded

Instructions:

Brown the bacon inside a skillet; drain then set on the side, save its oil. Brown the steak (use same skillet). Place bacon and browned steak inside a stockpot. Add tomatoes together with its liquid, paste, tomato sauce, jalapenos, pickled cactus, and green canned chilies; heat until simmering.

Saute the onions and green bell peppers (use same skillet) in half of the saved bacon oil till they become tender; add onto the stockpot. Add parsley, garlic, coriander, cumin, oregano, cayenne, paprika, pepper, salt, (chili) powders, and (lemon) juice; stir thoroughly.

Cook above gentle heat, at about an hour while stirring frequently to avoid sticking. Sift over corn flour; stir thoroughly.

Let it simmer for four hours, covered. Serve hot with cheeses and sour cream.

Pork Chili With Artichoke Recipe


Pork Chili With Artichoke Recipe

Ingredients:

3 lbs of pork (stew meat); trimmed off fat
Flour (for dredging)
Salt (to taste)
Black pepper (freshly ground, to taste)
1 Tbsp of olive oil
30 ml of garlic; chopped finely
1 pc of onion (large); chopped
Chili pepper (fresh or canned); chopped finely
2 Tbsps of powdered chili
1 Tbsp of cumin (ground)
1 pc of bay leaf
1 tsp of basil leaves (dried)
1 tsp of thyme leaves (dried)
1 tsp of oregano leaves (dried)
2 Tbsps of flour (plain)
1/2 c of wine (white)
3 c of broth (chicken, defatted)
5 pcs of plum tomatoes; peeled then chopped
19 oz of artichoke hearts (canned); drained then quartered
1 can of cannellini (or white beans, small); drained
1 Tbsp of juice (lemon)
1/4 c of cilantro (fresh); minced

Instructions:

Dredge pork on a seasoned flour, with pepper & salt. Cook above medium-high heat in (olive) oil till all of its sides are browned evenly. Set on the side.

Reduce heat into medium; add onions then cook till softened or for 1 min. Add two garlic cloves and (chili) pepper; cook for ten secs.

Add powdered chili, cumin, basil, bay leaf, thyme, flour, and oregano; continue to cook for one min while stirring continuously. Add cooked meat toss them well.

Add wine then heat till boiling. Add tomatoes along with broth; simmer for 30-45 mins, partially covered, till pork becomes tender or soft.

Add beans and artichokes; simmer for 10 more mins. Take out from heat then add cilantro, juice, and remaining garlic; stir thoroughly.

Chili Steak Recipe


Chili Steak Recipe

Ingredients:

3 pounds of rump steak (1-inch thick)
1/2 tsp of pepper
3 Tbsps of shortening
1 tsp of salt
1/2 c of chopped onion
1/2 c of strong black-coffee
2 garlic cloves; crushed
1 & 1/2 c of Texas red-chili
1/2 c of pepper (green); chopped

Instructions:

Slice steak evenly into 6 individual cuts. Mix pepper, garlic and salt.

Sprinkle seasonings on both steak sides. Place in glass dish and stand for an hour.

After an hour, gently pat dry your steak cuts then fry and brown in shortening ’til browned, turn once. Have meat removed from the pan at once.

Cook green-pepper & onion ’til soft, then add coffee and chili. Put steaks back into pan then allow to boil. Adjust the temperature then cook with cover for 45 mins.

Chili A La Becker Recipe


Chili A La Becker Recipe

Ingredients:

10 pcs of garlic; crushed
2 Tbsps of butter (or oil)
1 pc of onion (medium); chopped finely
1 pc of pepper (green, large); chopped finely
3 pcs of mushrooms; chopped
1/4 c of chopped celery
2 c of pork (with fat); minced
1 tsp of chili powder
2 c of beans (kidney, canned); drained
2 or 3 pcs of tomatoes; peeled then chopped
1/2 c of water
Salt

Instructions:

Rub the crushed garlic on a skillet; melt the butter then saute pepper together with the onion. Add celery then mushrooms; cook but don’t brown them.

Add the pork; cook till it turns brown or cooked. Add the chili powder; mix thoroughly.

Add beans, tomatoes, and water. Season salt as preferred. Cover then cook slowly for 30-45 mins.

Chili & Sausage Recipe

Ingredients:

1 lb of mild sausage (Italian)
1 lb of chuck (ground)
1 pc of large onion (yellow); cut to dices
2 pcs of garlic cloves (large); minced
1-1/2 Tbsps of chili powder
1-1/2 c of water
3/4 c of tomato paste (canned)
1 Tbsp of coffee (instant)
1 Tbsp of sugar (refined)
1 Tbsp of paprika
1 Tbsp of oregano
1 tsp of salt
1 tsp of pepper (black)
1 tsp of cumin (ground)
1 c of beans (kidney, dark red); drained
1 c of beans (refried)

Topping:
grated cheese (Monterey Jack)
scallions; chopped finely

Instructions:

Cook the meat, sausage, garlic, and onion inside a large pot. When meat is cooked, add chili powder, water, tomato paste, coffee, sugar, paprika, oregano, salt, black pepper, and cumin; let it boil. Once boiling, cover then let it simmer for 75 mins.

When done, add beans then stir well. Serve hot with scallions and cheese on top.

Loin Of Pork In Green Chili Sauce Recipe


Loin Of Pork In Green Chili Sauce Recipe

Ingredients:

10 pcs of tomatillos
2 Tbsps of oil (vegetable)
1/2 pc of onion (large); chopped finely
2 cloves of garlic; chopped
4 pcs of peppers (Serrano); seeded & chopped
Salt (to taste)
Pepper (to taste)
1 bunch of cilantro; stemmed & chopped
Sprigs of cilantro (for garnish)
1 jar of nopalito ( cactus pad strips, 14 ozs); drained, well-rinsed and julienned/sliced
1.5 lbs of pork (loin, boneless); sliced into 2″ cubes
Chilis (fresh, for garnish)

Instructions:

Cut X mark on each tomatillo’s bottom, removing the core. Put in short time into water (boiling) 15-20 seconds. Then drain. Remove husks.

Slice tomatillos into quarters then blend. Have oil heated on moderate flame then saute garlic as well as onion ’til limp. Put sauteed ingredients into blender alongside nopalitos, cilantro, pepper, salt and serranos.

Blend and process ’til mixture becomes ground coarsely. Put pork into pan (or Dutch oven) and add blended tomatillo. Boil.

Lower flame afterwards and let simmer 1.5 hours while covered ’til pork breaks easily using fork. Garnish strips of cilantro as well as chilis (whole) and serve.

Chili Pepper Steaks Recipe

Ingredients:

1/2 c of wine vinegar (red)
2 Tbsps of juice (freshly squeezed lime)
2 Tbsps of olive oil (virgin)
2 tsps of chili powder
1 tsp of crushed pepper (red)
1 tsp of salt
1/2 tsp of pepper (black)
1 pc of garlic clove (medium); crushed
4 pcs of steaks (6 oz each)

Salsa fresca:
1 pc of tomato (large, fresh); chopped
1 pc of avocado (fresh); chopped
2 pcs of onions (green); chopped
1 Tbsp of juice (freshly squeezed lime)
1 Tbsp of cilantro (fresh); chopped
1 pc of garlic clove (medium); crushed
1/4 tsp of pepper (black)
1/2 tsp of salt
1/16 tsp of hot sauce (pepper)
4 pcs of tortillas (corn, 6 inches each)

Instructions:

Combine juice, vinegar, oil, crushed pepper, powdered chili, salt, pepper, and garlic; save quarter of cup then place inside the refrigerator, covered. Place the rest of marinade inside a (plastic) bag and the steaks; turn or shake to let it coat then close tightly. Refrigerate for 8 hrs or for over a night; turn frequently.

Take out the steaks then discard the used marinade. Grill the steaks, 14 to 16 mins (rare to medium); turn them once then brush with the saved marinade. Prepare the tortillas, wrap with foil and grill (on last four mins of cooking); turn them once.

To serve, place the steak on a plate. Form the tortilla to a cone and fill with the salsa; place beside the steak.

(Salsa)
Combine tomato, avocado, onions, juice, cilantro, garlic, salt, black pepper, and hot sauce. Mix thoroughly.

Pork With Red Chili Sauce Recipe

Ingredients:

3 lbs of pork butt (lean, boneless); trimmed off fat and cut to 1-inch cubes
2 Tbsps of oil (preferably vegetable oil)
2 pcs of onions (large); chopped
2 pcs of garlic cloves; chopped finely or crushed
6 tsps of powdered chili
1 tsp of cumin (ground)
1-1/2 tsps of oregano
1-1/4 c of water (at room temperature)
1 tsp of honey (pure)
1/2 tsp of salt
3 Tbsps of tomato paste

Instructions:

Heat the oil on a skillet above moderately high heat; add the cubed meat then cook till browned. Add garlic, onion, cumin, oregano, and powdered chili; saute till onion becomes translucent. Add honey, water, paste, and salt; stir thoroughly.

Let it simmer for an hour, covered, till pork becomes tender. Skim then discard the fat. Serve (in tortillas; also rice and beans).

Chili ( Spicy Pork ) Recipe

Ingredients:

2 c of pork (ground)
4 pcs of garlic cloves; chopped finely
1 pc of sweet pepper (red, medium); chopped
1 pc of pepper (green, medium); chopped
1 c of celery (fresh); chopped
29 oz of diced tomatoes (canned, with liquid)
16 oz of beans (kidney, canned); drained then rinsed
6 oz of tomato paste (canned)
3/4 c of water
2 tsp of brown sugar
1 tsp of chili powder
1 tsp of oregano (dried)
1/4 tsp of dried pepper flakes (red)
1/4 tsp of cayenne pepper
1/16 tsp of hot sauce (pepper)

Instructions:

Cook onion and pork inside a (Dutch) oven till pork turns brown. Drain then add garlic, celery, and peppers; stir and cook, at about five mins. Add tomatoes, beans, tomato paste, water, brown sugar, oregano, chili powder, pepper flakes, cayenne pepper, and hot sauce; let it boil.

Once boiling, reduce the heat and cover. Let it simmer, about forty-five mins.

Chili Verde Mexican Recipe

Ingredients:

2 pounds of cubed pork
1 Tbsp of minced garlic
A can of tomatoes (stewed, 14 ounces)
1/2 c of chopped chilies (green)
1 c of Fresca salsa
1/2 c of water
1/2 c of dry onions
1 tsp of ground coriander
2 Tbsps of chopped cilantro

Instructions:

Cook garlic and pork in half-cup of water ’til all liquid is fully absorbed. Allow pork to cook in its own fat for few mins ’til browned.

Add in onion, saute until translucent, then add chilies and tomatoes, simmer with cover for 30-40 mins.

Add cilantro, pepper and salt prior to serving. Stir well. Best when served w/ salsa.

Lentejas En Adobo (Lentils With Chilies Pork) Recipe


Lentejas En Adobo (Lentils With Chilies Pork) Recipe

Ingredients:

1/2 lb of lentils (1 heaping cup, brown in color if available);
1/2 pc of onion (white, small)
Sea salt (to taste)

For the Meat:
1 lb of pork (for stewing, boneless); sliced into 1″ cubes
Sea salt (to taste)

For Final Cooking & Seasoning:
5 pcs of ancho chilies (small); deveined, deseeded and toasted lightly
1/4 lb of tomatoes; broiled
1 love of garlic; peeled & chopped roughly
1/4 tsp of oregano (dried)
1 pc of clove (whole)
1 stick of cinnamon (1.5-inch)
1 Tbsp of lard (melted) or oil (safflower)
1 pc of plantain (medium, about 8 ozs); peeled & sliced into 1/4″ cubes
2 slices of pineapple (thick); peeled, cored & sliced to form triangular small wedges

Instructions:

Ensure no foreign matter is in lentils by running hands through them. Wash three times and place in pan. Put salt, onion as well as sufficient water in order to reach 2″ above lentils’ surface. Quickly simmer on moderate heat.

Allow to further simmer ’til lentils become soft (approximately three hours but depends on age). Stock water that is in near-boiling temperature by your side.

Place pork in pan and place salt as desired. Pour water, immersing pork. Simmer (fast) ’til pork becomes tender yet not too soft. Drain then strain. Reserve broth then set aside meat.

Submerge chilies (dried) in water (boiling) for 15 mins or ’til they are soft and fleshy. Pour out liquid. Blend ’til smooth with a cup of reserved broth, cinnamon, clove, oregano, garlic and tomatoes.

Melt lard on pan (for frying) ’til heated through. Put blended items then fry on moderate heat while stirring, about four minutes. Pour mixture into lentils then add pineapple, plantain, pork and the rest of broth.

Simmer for half an hour, adjusting taste with salt or water. Cook ’til mixture is like soup (thick). This recipe creates 4 serving portions.

Ingredients:

1 Tbsp of olive oil
1 lb of beef (very lean, ground coarsely)
1 lb of pork (very lean, ground coarsely)
3 pcs of onions (large); chopped finely
Bell pepper(s)
2 pcs of celery stalks; chopped finely
1 Tbsp of garlic; chopped finely
1 Tbsp of dried oregano (Mexican)
2 pcs of bay leaves
2 tsps of cumin (ground)
3 c of tomatoes (with tomato paste)
1 c of broth (beef)
1 c of water
Salt
Black pepper (freshly ground)
1/2 tsp of chile caribe
2 Tbsps of ground chile (red, mild-hot)
2 c of beans (kidney); cooked then drained

Instructions:

Combine the ground meat. Heat oil on large pot above moderate heat then add meat; stir constantly to crumble. Cook till meat turns brown,

Add onions, pepper, garlic, celery, oregano, cumin, and bay leaves; mix thoroughly. Add tomatoes, water, broth, black pepper, salt, chile, and caribe; let it boil. Once boiling, reduce the heat then let it simmer, at about twenty mins, uncovered, while stirring frequently.

Add beans; simmer, at about another 10 mins. Taste then adjust with the seasonings.

Chili Pork Chops Recipe


Chili Pork Chops Recipe

Ingredients:

4 pcs of pork chops (lean)
2-1/2 c of creamed corn (not without salt, canned)
2 tsps of pepper (chili powder)
1 tsp of onion; minced
1/4 c of pepper flakes (sweet)
1/2 c of breadcrumbs
2 Tbsps of butter; melted

Instructions:

Trim the excess fats from the pork. Rub pepper and salt on each of the sides. Melt the fats and cook the pork in it till browned. Combine salt, corn, chili, pepper, pepper flakes, and onion; spoon above the pork.

Cover then bake at 350 degrees F for 35 mins. Blend breadcrumbs with the (melted) butter; drizzle above and continue to bake for another 15 mins.
