Chili Blanco Especial Recipe
Ingredients:
2 c of dry beans (white, northern); soaked in water for 24 hours then drained
5-1/4 c of broth (chicken)
2 pcs of garlic cloves; minced
1 pc of onion (white, large); chopped
1 Tbsp of ground pepper (white)
1 tsp of salt
1 Tbsp of oregano (dried)
1 Tbsp of cumin (ground)
1/2 tsp of cloves (ground)
7 oz of chilies (green, canned); diced
5 c of chicken breast; cooked and diced
1-3/4 c of broth (chicken)
1 Tbsp of pepper (jalapeno); diced
8 pcs of tortillas (flour)
Condiments:
Shredded cheese (Monterey Jack)
Sliced olives (black)
Salsa (chunky)
Sour cream
Avocado; diced
Instructions:
Combine 5-1/4 cups of broth, beans, garlic, ground pepper, onion, salt, cumin, cloves, and oregano inside a crockpot. Cover then let it simmer, about five hours till the beans have softened, stirring frequently. Add chilies, chicken meat, 1-3/4 cups of broth, and jalapeno.
Let it simmer, about an hour, covered. Spoon mixture onto a tortilla then serve together with some condiments.

Chili Con-Caucasian (White Chili) Recipe
Ingredients:
Cooking spray
1 Tbsp of oil (olive)
1 lb of chicken breast; boned, skinned and sliced into dices
1/2 c of shallots; chopped coarsely
3 pcs of garlic cloves; finely minced
18 ozs of tomatillas (canned); drained & chopped coarsely
1 can of Rotel tomatoes; undrained but chopped
1 can of broth (chicken, 13 ozs)
1 can of peppers (green chile); undrained
1/2 tsp of oregano (flaked)
1/2 tsp of coriander (seeds); crushed
1/4 tsp of cumin (ground)
2 cans of beans (cannelloni); drained
3 Tbsps of lime juice (freshly squeezed)
1/4 tsp of pepper (black)
1/4 c of cheese (sharp cheddar); grated
Instructions:
Apply cooking spray on huge skillet then drop olive oil then heat over moderate-high flame. Saute chicken three minutes ’til done and lift it off pan then set it aside.
Put garlic and shallots into pan then saute ’til tender. Add tomatillas, spices, peppers, broth and Rotel.
Allow to boil then lower flame to simmer 1/3 hour. Drop beans and chicken then cook five more minutes. Then add juice as well as black pepper, continue heating and pour dish into bowls garnished using cheese.
You may also place everything, excluding cheese, into crockpot then cook eight hours. Serve dish with beer (Mexican), dip (avocado), cream (sour) and chips (tortilla).

Chili (Crockpot) Recipe
Ingredients:
6 c of beans (kidney, canned); drained
4 c of tomatoes (canned); cut up
4 c of beef (ground); browned then drained
2 pcs of onions (medium); chopped coarsely
1 c of celery; diced
1 pc of garlic cloves; minced
6 Tbsps of chili powder
1 tsp of cumin (ground)
Salt & pepper (to taste)
Instructions:
Place the beans inside the crockpot. Add tomatoes on top, then beef, onions, celery, chili powder, cumin, salt, and pepper. Stir only once then cover. Cook above gentle heat for 10-12 hours (or above high heat for 5-6 hours).

Overnight Turkey Chili (No Beans) Recipe
Ingredients:
2 pcs of turkey thighs (w/o skin); cubed
1 pc of onion (large); chopped
1 pc of garlic clove; minced
1 c of tomatoes (undrained); sliced
2 pcs of peppers (green); seeded and chopped
1/4 c of cilantro (fresh); chopped
1 Tbsp of powdered cocoa (plain)
3 pcs of peppers (jalepeno); chopped
1 tsp of chili powder
2 tsps of cumin seeds
Instructions:
Combine turkey, onion, garlic, tomatoes, peppers, cilantro, cocoa, jalapeno, chili powder, and cumin seeds inside a crockpot and cover. Cook it for 14-16 hours above gentle heat.

Mike’s Daytona Chili Recipe
Ingredients:
3 lbs of beef (ground)
1 lb of pork (ground)
1 lb of hot sausage (Italian); sliced to 1/2-inch thick
4 Tbsps of diced onion
1 Tbsp of garlic (granulated)
3 Tbsps of olive oil
3 tsps of hot sauce (Tabasco)
1 tsp of garlic powder
1 tsp of onion powder
1 Tbsp of cumin (ground)
2 cans of stewed tomatoes
3 Tbsps of chili powder
1 Tbsp of sugar (brown)
1 tsp of salt
1 Tbsp of paprika
2 tsps of Worcestershire sauce
5-3/4 c of juice (V-8)
1 can of beer (Mexican)
1/4 c of cornmeal (to thicken)
Instructions:
Brown the meat, garlic, and onions in oil. Once done, drain and return it to the pot. Add granulated garlic, hot sauce, garlic powder, onion powder, cumin, stewed tomatoes, chili powder, brown sugar, salt, paprika, Worcestershire sauce, juice, and beer; let it boil. Once boiling, decrease the heat and let it simmer, about 2-1/2 hours.
Combine cornmeal with (beef) stock; add into the pot. Let it stand for a day. Serve.
Crockpot:
Place beef, pork, sausage, onion, granulated garlic, oil, hot sauce, garlic powder, onion powder, cumin, stewed potatoes, chili powder, brown sugar, salt, paprika, Worcestershire sauce, juice, and beer inside a crockpot. Cook for four hours at high setting or eight hours for low. After three hours for high (six hours for low), add cornmeal then mix. Add (beef) stock if necessary.

Low-Fat Healthy Chili In Crockpot Recipe
Ingredients:
1 pound of trimmed beef (stew meat)
6 ozs of tomato paste
2 pcs of bell peppers; chopped
1 c of onions (medium); chopped
1 Tbsp of chili powder
2 cl of garlic; chopped finely
1 tsp of cumin; ground
1/2 tsp of oregano (dried); pounded
Instructions:
Remove fat off meat and cut to 1/2-inch cubes. Transfer meat into a crockpot then add in the paste to coat the meat completely. Add in the tomato sauce, bell peppers, onions, chili powder, garlic, cumin and oregano. Mix well.
Don’t add additional water or any liquid. Cook chili for twelve hours over low-heat with cover.
Skim out the excess fat found on surface of chili then discard. Good for 4 persons.

Modified Tuscon Jailhouse Chili Recipe
Ingredients:
2 lbs of lean beef (ground)
6 pcs of garlic cloves; pureed
4 oz of chilies (green, Casa Fiesta); diced
4 oz of jalapeno peppers (nacho-sliced, Casa Fiesta)
6 Tbsps of chili powder
6 oz of tomato paste (Hunt’s, canned)
16 oz of tomatoes (canned); diced
1 Tbsp of vinegar (balsamic)
1 Tbsp of olive oil (extra virgin)
21 oz of beans (pinto, Bush’s Best); drained
1 pc of bay leaf (whole)
3 tsps of cumin (ground)
1 tsp of salt
1 tsp of pepper (black)
2 Tbsps of sugar (brown)
1 lb of onion (yellow, large); diced
Instructions:
Heat the oil on a skillet then saute the onions till they become translucent. Add the pureed garlic, stir constantly to prevent from burning. Take out sauteed mixture from the skillet. Place the beef on the skillet; cook till browned then drain excess fat.
Add the sauteed mixture and quickly stir. Pour onto the crockpot and add chilies, jalapeno, chili powder, tomato paste, tomatoes, vinegar, beans, bay leaf, cumin, salt, pepper, and brown sugar; stir them well. Cook for 8 hours at low setting and 4 hours at high.

Chili Pheasant Recipe
Ingredients:
8 pcs of pheasant breasts; deboned
10-1/2 oz of chilies (green, canned); chopped
8 oz of cheese (Monterey Jack); cut to 8 strips
1/4 c of breadcrumbs
1/4 c of cheese (Parmesan)
1 Tbsp of chili powder
1/2 tsp of salt
1/4 tsp of cumin (ground)
10 Tbsps of butter; melted
15 oz of tomato sauce (canned)
1/2 tsp of cumin (ground)
1/3 c of onion; sliced
Hot sauce (pepper, to taste)
Instructions:
Flatten the meat using a (meat) mallet. Place a tablespoon of chilies on top and (one strip) Monterey cheese. Roll, enclosing its filling then secure with toothpick. Do the same for all.
Combine breadcrumbs, chili, Parmesan, pepper, salt, and a teaspoon of ground cumin; mix thoroughly. Dip rolled meats in melted butter; coat them with the mixture of breadcrumbs. Place on an ovenproof dish then refrigerate for four hours (or more).
Drizzle over the rest of the butter onto the rolls. Bake inside the oven at 400 degrees F for 20-30 mins or until they become brown. Serve with the sauce.
To make the sauce, combine tomato sauce, cumin, onion, and hot sauce inside a medium saucepan until heated thoroughly. Spoon hot mixture over the rolls. Serve while hot.

Chili-Beer Brisket Of Beef Recipe
Ingredients:
2.5 lbs of beef (brisket)
1/2 c of onions; coarsely chopped
1 tsp of salt
1/4 tsp of garlic (powder)
1 tsp of pepper (black)
12 ozs of sauce (chili)
12 ozs of beer
For garnishes:
2 pcs of tomatoes (medium)
6 sprigs of parsley
Instructions:
In a crockpot, set brisket, fatty side facing down. Put powdered garlic, pepper, salt as well as onion. Add in the chili sauce. Cook using crockpot (in low setting) for three hours.
Put beer then set crockpot into moderate for another 30 mins. Put brisket above platter (large) and prepare by slicing it thinly.
Garnish using tomato slices as well as parsley. This recipe makes 8 serving portions.

Texas Chili – Southern Recipe
Ingredients:
3 lbs of beef (ground)
1 lb of pork (ground)
1/2 Tbsp of bacon fat (or 5 pcs of precooked bacon strips then crushed)
1/16 c of sugar (white)
1/8 c of sugar (dark brown)
1 Tbsp of soup base (beef)
1/2 tsp of coffee (instant or real)
1 c of celery; chopped
2 tsps of salt
1 tsp of thyme
1 tsp of cumin seed
1 tsp of garlic (powder or minced)
1 Tbsp of cocoa powder
2 pcs of bay leaves
1 tsp of cilantro
1/2 Tbsp of oregano (Mexican)
1 tsp of hot sauce (Tabasco)
or
1 tsp of ground pepper (cayenne)
3/8 c of chili blend
2 Tbsps of paprika
48 oz of juice (V-8)
1 c of onion; chopped
1/2 c of peppers (green or red); chopped
16 oz of stewed tomatoes (canned)
Instructions:
Brown beef together with pork then drain excess fat; place inside a crockpot. Add bacon fat, sugars, soup base, coffee, celery, salt, thyme, cumin, garlic, cocoa, bay leaves, cilantro, oregano, hot sauce, cayenne, chili blend, paprika, juice, onion, peppers, and stewed tomatoes. Cover; continue to cook 4-6 hours at high or 8-12 hours for low.
To Cook Using The Stove:
Brown beef together with pork then add onions till they turn translucent; set aside. Cook bacon fat, sugars, soup base, coffee, celery, salt, thyme, cumin, garlic, cocoa, bay leaves, cilantro, oregano, hot sauce, cayenne, chili blend, paprika, juice, peppers, and stewed tomatoes; mix them well.
Cook for five mins. Add the browned meat; cover. Slowly cook above gentle heat for four hours or more, stirring every 10-15 mins.

Ingredients:
1 lb of round (ground)
1/4 c of catsup
3/4 c of water
1/2 tsp of chili powder
1 pc of onion (small); chopped
salt & pepper (to taste)
Instructions:
Combine all the ingredients thoroughly. Lay it on slowcooker or crockpot.
Let it cook about 4 hrs, often stirred ’til it is done. This can be used as hamburger or hotdog condiment.

Chili Van Pelt Recipe
Ingredients:
3 c of dry beans, half-pinto, half-black
6 garlic cloves
1 Tbsp of cumin
1/4 tsp of oregano
1 onion (large)
A can of salsa (S & W)
1/3 c of chili seasoning
1 & 1/2 pound of beef (ground)
3 pcs chipotle
Instructions:
Have beans soaked overnight. Cook the beef ’til browned. Drain extra fat off. Soak dry chipotles in heated water for five minutes then have them pulverized together w/ garlic & onion in blender.
Place oregano, onion, chili seasoning, garlic, cumin, beans & beef in crockpot. Add water enough to have everything covered.
Simmer mixture for 12 hrs. Add salsa 1 hr before dish is done.

Ingredients:
1 pound of beef (ground); browned then drained
1/2 c of wine (red)
1 diced green pepper (small);
1 can of chili-beans
1 Tbsp of chili-seasoning
1 diced onion (medium);
1 can of tomatoes; diced
1 can of tomato-paste (small)
1 pack of chili-seasoning mix
Instructions:
Combine all ingredients in crockpot placed over low-heat, then let it cook for at least 6 hrs. Best when added w/ cheese prior to serving.

Chili Short Ribs Recipe
Ingredients:
3 pounds of short-ribs
2 cloves garlic
15 ounces of tomato-sauce
1 tsp of pepper
32 ounces of red beans (kidney)
1 Tbsp of oil (vegetable)
2 tsps of chili seasoning
1/2 tsp of salt
Onion
Instructions:
Cook ribs in well-heated oil ’til browned. Remove then drain and reserve 1 teaspoon of oil. You add in garlic, cook ’til light-brown in color.
Add in chili seasoning and tomato-sauce, then simmer. Meanwhile, dust the ribs w/ pepper and salt then transfer into a crockpot. You add the sauce & onions. Cover then cook slowly for 6-8 hrs on low-fire.
Have bones removed form crockpot then add in beans. Cook with cover for 60 mins. Best when served w/ corn bread.
