Blue Ribbon Chili 1993 Puppy’s Breath Chili Recipe

Ingredients:

3 lbs of beef sirloin; one meat cut into small-sized pieces
3 Tbsps of cumin; ground
2 tsps of oil (Wesson)
1 pc of yellow onion (small)
1 can of beef broth (14 ozs)
6 cl of garlic; minced
1 tsp of oregano
3 Tbsps of chili powder (Gebhardt)
1 Tbsp of chili (New Mexico)
6 Tbsps of chili (California)
1 can of tomato sauce (8ozs)
1 pc of New Mexico chili (dried)
1 pc of pepper; boiled & peeled
3 pcs of chili (California, dried)
1 can of chicken broth (14 ozs)
1 tsp of hot sauce (Tabasco)
1 tsp of brown sugar
Lime
A dash of MSG

Instructions:

Saute meat with oil about 60 minutes over medium-heat. Add in onions and broth, enough to cover the meat. Allow to boil.

Cook about 15-18 minutes. Mix in a tablespoon of cumin with a teaspoon oregano. Lower heat.

Allow to simmer and mix in one-half garlic and one-half of chili. Cook about 10-12 minutes. Blend in Hunts and pulp of peppers plus garlic.

Mix in the remainder of broth as desired. Mix in remainder of cumin with chili. Allow to simmer about 25-28 minutes over low-medium heat.

Stir mixture often. Increase heat and let it boil. Add hot sauce, sugar, lime juice and salt.

Let it simmer over medium-heat. Serve hot.

Chili Powder (Low Sodium) Recipe


Chili Powder (Low Sodium) Recipe

Ingredients:

3 Tbsps of paprika
2 tsps of oregano; crushed finely
1 tsp of cumin (ground)
1 tsp of turmeric (ground)
1/4 tsp of cayenne pepper
1 tsp of garlic powder

Instructions:

Combine paprika, oregano, cumin, turmeric, garlic (powder), and cayenne pepper; mix thoroughly. Use as a substitute for powdered chili.

Ingredients:

4 pcs of dried chilies (hot)
3 pcs of dried peppers (Ancho)
4 tsps of cumin seeds
1 tsp of garlic powder
1 tsp of coriander or cilantro
1 tsp of oregano
1/2 tsp of cloves (whole)

Instructions:

Combine hot chilies, Ancho peppers, cumin seeds, garlic powder, coriander, oregano, and cloves inside a food processor. Grind until mixture turns fine powder. Store inside an airtight container.

Chili S.O.S. Recipe

Ingredients:

1 lb of beef (ground)
1 Tbsp of chili powder
1 tsp of salt
2 Tbsps of shortening
1 pc of onion; minced
1/16 tsp of ground pepper (black)
1 pc of garlic clove; minced
1 pc of bell pepper (green); chopped
1-1/2 cans of tomatoes
1/2 c of sharp cheese (Cheddar); grated
2 Tbsps of flour

Instructions:

Heat the shortening on a skillet above moderately high heat. Add the meat; cook till crumbly, stirring constantly. Add flour, chili, salt, onion, pepper, garlic, tomatoes, and bell pepper; blend thoroughly.

Reduce the heat; let it simmer then cook for half an hour. Add the cheese; stir thoroughly. Serve at once.

Chili Paste – Sambal Recipe

Ingredients:

1/2 c of whole hot chiles (red, dried); stemmed then seeded
2 pcs of garlic cloves; halved
1 pc of onion (small); chopped coarsely
1/4 c of sugar (refined)
1/4 c of juice (lemon)
1/2 tsp of salt
1/4 c of water

Instructions:

Combine hot chilies, onion, garlic, sugar, water, salt, and juice inside a processor; process till smooth. Pour onto a saucepan; cook above moderate heat, while stirring frequently, for 10 mins or till reduced to half cup. Let it cool before serving.

Chili Salsa Recipe

Ingredients:

6 pcs of tomatoes (large); cut in sections
2 pcs of garlic cloves; peeled
3 pcs of chilies (green); roasted then peeled.
or
4 oz of canned chilies (green)
1 tsp of oregano (fresh or 1/4 tsp dry)
4 pcs of peppers (hot)
1 pc of onion (sweet, large); peeled and cut to pieces

Instructions:

Place tomatoes, garlic, green chilies, oregano, peppers, and sweet onion inside a blender. Blend till chopped finely.

Ingredients:

1 c of dried cayenne (ground)
1 c of dried red chile (Pasilla, Piquin, Chile de Arbol)
5 c of dried red chiles (New Mexico)
2 c of garlic powder (Watkins)
1-1/2 c of cumin (Watkins, ground)
1-1/2 c of oregano (ground)

Instructions:

Combine cayenne, (red) chile, New Mexico chile, garlic powder, cumin, and oregano. Mix thoroughly. Store in an airtight container.

Chili Sauce Recipe


Chili Sauce Recipe

Ingredients:

13 lbs of tomatoes; scalded and peeled
1 Tbsp of mustard (dry)
1 lb of celery (fresh)
2 pcs of cinnamon sticks
4 c of onions (small); chopped
2 lbs of sugar (brown)
3 pcs of peppers (green)
1/4 c of salt
1/2 Tbsp of cloves (ground)
4 c of vinegar (cider)

Instructions:

Cook the tomatoes for 15 mins. Drain half of its juice and chop the tomatoes. Return to the saucepan, add vinegar, sugar, and salt and simmer for 90 mins.

Tie the spices inside a cheesecloth; add to the mixture. Cook for another 90 mins.

Discard the bag with spices. Pour the mixture inside an airtight container.

Chili Rice Salad Recipe

Ingredients:

1 pkg of Spanish rice (Uncle Ben’s, fast cooking)
2 c of beans (kidney, light red); drained well
2 c of pepper (green); chopped
1 c of onion; chopped finely
1 c of oil (salad)
1 Tbsp of chili powder
3 Tbsps of vinegar
1/2 tsp of hot sauce (Tabasco, pepper)

Instructions:

Prepare the Spanish rice as stated in its package instructions, omit margarine. let it cool for a while. Add peppers, onions, and beans. Combine oil, chili, Tabasco, and vinegar; stir onto the mixture of rice.

Chill then serve.

Cookout Chili Recipe

Ingredients:

1 lb of bee chuck, hamburger grind
1 can of tomato sauce (16 oz)1 can of beans (kidney, 16 oz)
1 tsp of chile (red, hot & ground)
1 tsp of chile (Caribe)
1/2 tsp of oregano (preferable Mexican); dried
1/2 tsp of cumin (ground)
4 pcs of chilies (green, fresh, whole)
2 pcs of scallions; chopped coarsely
1 pc of bell pepper
1 pc of jalapeno pepper (pickled)

Instructions:

Shape meat forming 3 or 4 patties. Roast patties ’til it is crisp outside and medium-rare inside. Set aside in order to be cooled. Roast the jalapeno, if fresh, green chilies and pepper (bell) lightly.

Then roast green or red chilies and chop peppers finely. Break the patties into skillet, then add in the rest of the ingredients and peppers into meat. Cook for about 30 mins, the least; occasionally stir.

Season based on your desired taste. Serves 2.

Sweet Spicy Chili Sauce Recipe

Ingredients:

1 pc of garlic clove
1 pc of onion (Spanish); quartered
2 pcs of fresh chilies (green); seeded
2 Tbsps of corn oil
1/2 tsp of ginger (ground)
1 c of tomatoes (canned, with juice)
1/3 c of raisins (seedless)
1 Tbsp of juice (lemon)
1 Tbsp of soy sauce (dark)
2 Tbsps of sugar (light brown)
Salt (to taste)
Black pepper (freshly ground, to taste)
Sprigs of parsley (fresh)

Instructions:

Place chilies and onion inside the processor; process till finely chopped. Saute the processed mixture with ginger on a medium saucepan; gently cook for 3 mins. Add the tomatoes; stir constantly to break them up then add raisins, juice, sugar, water, and soy sauce.

Let it boil then reduce the heat. Simmer for 15 mins, uncovered. Pour onto the processor; process to the preferred consistency. Heat again then season pepper and salt. Garnish parsley.

Chili Rice Recipe

Ingredients:

1 tsp of olive oil
1/2 pcs of onion (large); chopped
2 pcs of garlic cloves (medium); chopped finely
2 c of cooked rice (brown)

Sauce:
4 oz of chilies (green, canned)
3 Tbsps of salsa
1/3 c of vinegar (white)
1/4 c of chopped onion
1/2 c of fresh cilantro; chopped

Instructions:

Heat the oil on a large skillet. Saute garlic along with onion till the onion becomes translucent and limp. Add the cooked brown rice; stir thoroughly and constantly till thoroughly heated.

Combine salsa, vinegar, and chilies inside the processor; process till smooth. Add cilantro and onion; stir thoroughly. Pour above the fried rice. Serve at once.

Chili Salsa Beef Recipe

Ingredients:

1-1/2 lbs of beef chuck (boneless, fat-trimmed); cut to 1-1/4 inch
1 Tbsp of olive oil
1 c of salsa (hot chunk or prepared medium)
2 Tbsps of sugar (brown)
1 Tbsp of soy sauce (reduced sodium)
1 pc of garlic clove; crushed
1/3 c of cilantro; chopped coarsely
2 Tbsps of juice (freshly squeezed lime)
2 c of hot rice (cooked)

Optional:
Sprigs of cilantro
Lime (fresh); quartered

Instructions:

Heat the oil inside a (Dutch) oven above moderate heat. Add the beef till browned, stirring frequently. Drain the fat then add salsa, soy sauce, garlic, and sugar. Let it boil.

Once boiling, reduce the heat into low. Let it simmer, covered, for 60 mins. Remove the cover and continue to cook for half an hour till the beef becomes tender. Take out from the heat and add (lime) juice and cilantro; stir.

Spoon over the rice and garnish lime and cilantro.

2 tsps of oregano (dried)

Ingredients:

2 c of pork (ground)
4 pcs of garlic cloves; chopped finely
1 pc of sweet pepper (red, medium); chopped
1 pc of pepper (green, medium); chopped
1 c of celery (fresh); chopped
29 oz of diced tomatoes (canned, with liquid)
16 oz of beans (kidney, canned); drained then rinsed
6 oz of tomato paste (canned)
3/4 c of water
2 tsp of brown sugar
1 tsp of chili powder
1 tsp of oregano (dried)
1/4 tsp of dried pepper flakes (red)
1/4 tsp of cayenne pepper
1/16 tsp of hot sauce (pepper)

Instructions:

Cook onion and pork inside a (Dutch) oven till pork turns brown. Drain then add garlic, celery, and peppers; stir and cook, at about five mins. Add tomatoes, beans, tomato paste, water, brown sugar, oregano, chili powder, pepper flakes, cayenne pepper, and hot sauce; let it boil.

Once boiling, reduce the heat and cover. Let it simmer, about forty-five mins.

Ingredients:

1 c of dried peppers (chili); stemmed and seeded
1/4 c of cumin (ground)
2 Tbsps of garlic powder

Instructions:

Combine peppers, cumin, garlic powder, cayenne, and oregano inside a processor. process till turned into fine powder. Let the mixture settle first before transferring on an airtight container.

Ingredients:

1/2 lb of bacon (with fat)
10 oz steak (T-bone); finely chopped
5 lbs beef (chuck); coarsely ground
12 oz beef (Lone Star)
1 lb of armadillo meat (fresh)
2 lbs finely chopped onions (spanish)
5 Tbsps red powdered chili (New Mexican)
2 Tbsps powdered cayenne
1/2 c green chili (New Mexican)
4 pcs Jalapenos (stems and seeds)
1 pod of red chili (New Mexico)
1/2 tsp of tabasco (sauce)
1 tsp paprika (hot, Hungarian)
1 lb of Italian spicy sausage
3 lbs crushed tomatoes (plum)
1 Tbsp oregano (Mexican)
1 1/2 c of water
1 1/2 c diced bell pepper
1 Tbsp of brown sugar
1 Tbsp chopped garlic (in oil)
2 tsps of salt
2 Tbsps Worcestershire sauce
5 Tbsps cumin (ground)

Instructions:

Pre-heat stockpot and fry bacon. Add onions and cook til tender. Gradually add in the other ingredients, starting with the meats (T-bone steak, beef chuck, Lone Star beef and armadillo), spices then sauces. Increase heat until it boils, then reduce temperature. Simmer in about two hours. Serve while hot.

Chili-Spiced Beef & Rice Salad Recipe


Chili-Spiced Beef & Rice Salad Recipe

Ingredients:

1 lb of sirloin steak (beef top); boneless
2/3 c of rice
1/4 c of walnuts (toasted); chopped coarsely
2 tsp of seasoning mix (spicy)
3 pcs of onions (green); thinly sliced
1 pc orange or apple (medium); cut into pieces

Instructions:

Cook the rice based on directions in the package, dropping 1 teaspoon of seasoning mix into water. This produces approximately two cups.

Then heat a 10″ pan for frying for about 5 mins above medium flame. In the meantime, coat steak with a teaspoon of seasoning and panbroil the steak for 12 to 14 mins above medium flame and turn it once. You may rub salt in it, when desired.

Now, mix the walnuts, onions, fruits as well as rice. Slice steak to 1/4″ thick. Lay rice and beef into a platter. Good for 1 serving.

Mexican Chili Recipe

Ingredients:

1 lb of beef; ground
15.5 ozs of hot & spicy beans
28 ozs of chopped tomatoes
1.5 c of chopped celery
1 c of chopped onion
1/2 c of chopped green bell pepper
4 ozs of (chili) peppers (drained); seeds removed & chopped
1 pc of bay leaf
2 Tbsps of sugar
1 tsp of salt
1 tsp of diced marjoram
1/2 tsp of powdered garlic
Pepper

Instructions:

Combine all of the ingredients except meat in a crock pot. Saute beef ’til grown and drain off fat. Add meat to the pot. Cook chili on low-heat for 8-10 hours.

Remove fat off surface. Remove the leaf then stir the chili before you serve.

Ingredients:

6 pcs of dried hot peppers (New Mexico)
6 pcs of dried peppers (chipotle)
3 pcs of peppers (Pasilla Negro)
2 pcs of peppers (Mulato)

6 Tbsps of cumin seeds
6 Tbsps of coriander seeds
1 Tbsp of cloves (whole)
3 Tbsps of celery seeds
2 Tbsps of cayenne (ground)

Instructions:

Toast chiles on a skillet, without oil. Make sure not to burn or darken. Toast whole cloves, coriander seeds, and cumin seeds on a skillet, without oil.

Grind all (toasted) spices along with the celery seeds. Grind chiles then mix with cayenne. Mix thoroughly.

Blue Ribbon Chili 1992 Recipe

Ingredients:

3 lbs of sirloin; cubed
Broil
Tri-tip
6 ozs of sausage
4 Tbsps of Wesson oil
1 can of beef broth (14.5 ozs)
1 can of tomato sauce (Hunts, 8 ozs)
1 can of Snap-e-tom (6 ozs)
1 can of Budweiser (12 ozs)
11 Tbsps of chili (powder) (Gebhardt)
1 tsp of garlic (powder)
1 Tbsp of onion (powder)
2 tsps of hot sauce (Tabasco)
1 Tbsp of cumin
Salt

Instructions:

Fry beef with the oil. Saute the sausage ’til done. Drain sausage well. Transfer beef and sausage in a pot.

Add in half of broth and allow to simmer. Mix in tomato sauce, Budweiser, Snap-e-Tom, chili, onion, garlic, and a teaspoon of hot sauce.

Allow to simmer for an hour ’til meat becomes tender. Mix in the remainder of the chili, cumin and hot sauce.

Allow to simmer for half an hour. Season with salt. Makes 1 helping.

Chili Tostados Recipe


Chili Tostados Recipe

Ingredients:

8 flour tortillas
2 c of cowboy-chili
1 lettuce; shredded
1 tomato; chopped
Shortening
1 c of Texas-red
1 guacamole recipe

Instructions:

Heat shortening quickly in frying pan. Fry the tortillas ’til crisp.

You spread at least 1/4 c of warmed cowboy chili above each tortilla. Scoop 2 tablespoonful of warmed Texas-red then spread on tortilla top.

Garnish w/ lettuce. Scoop 1/4 c of guacamole then sprinkle all over tortillas w/ tomatoes.
