Chili Salsa Beef Recipe


Chili Salsa Beef Recipe

Ingredients:

1-1/2 lbs of beef chuck (boneless, fat-trimmed); cut to 1-1/4 inch
1 Tbsp of olive oil
1 c of salsa (hot chunk or prepared medium)
2 Tbsps of sugar (brown)
1 Tbsp of soy sauce (reduced sodium)
1 pc of garlic clove; crushed
1/3 c of cilantro; chopped coarsely
2 Tbsps of juice (freshly squeezed lime)
2 c of hot rice (cooked)

Optional:
Sprigs of cilantro
Lime (fresh); quartered

Instructions:

Heat the oil inside a (Dutch) oven above moderate heat. Add the beef till browned, stirring frequently. Drain the fat then add salsa, soy sauce, garlic, and sugar. Let it boil.

Once boiling, reduce the heat into low. Let it simmer, covered, for 60 mins. Remove the cover and continue to cook for half an hour till the beef becomes tender. Take out from the heat and add (lime) juice and cilantro; stir.

Spoon over the rice and garnish lime and cilantro.
